I don't know if there's a tutorial for how to set the <material> tag in sdf, but there are plenty of examples on Fuel. Here's one: https://app.gazebosim.org/OpenRobotics/fuel/models/Panda%20with%20Ignition%20position%20controller%20model. There's a download button on the right side that'll let you download a zipped file with the original model file and materials.
